Recipe – Veggie Omelete

Omelet with peppered mushroom, spinach and mozzarella cheese (Keto friendly)

• Eggs – 3
• Mushrooms (chopped medium size and dry fried with olive oil, pepper, salt)
• A bunch of spinach (boil with water and salt for  5 mins).
• Salt to taste.
• Black pepper (1 tablespoon).
• Butter 3 spoons.

1.Take a pan add 2 spoons of butter once the pan is hot.add mushrooms which are cleaned.saute until it’s fried(5 mins.).
2.Boil spinach for 5 mins and remove from water and squeeze water out.
3.Keep grated cheese ready.
4.Take a bowl mix 2 whole eggs.add pepper powder, salt and mix it well. use the previous pan.add 1 spoon of butter to pan.pour egg mix.once the omelet is cooked from one side, add fried mushrooms on the top layer,add spinach which is removed out of boiling water and add grated mozzarella cheese.once cheese melted, transfer to the serving plate.
